A yummy winter recipe

I have been far too busy all month, and it's only the 10th! All I can do is think about what I'd rather be doing when I'm working on my homework. I seriously have a list of ten things I'd like to blog about...so I'm going to cross one off the list, even though I really should be doing some reading for class tomorrow! 
One of my homework assignments is a 4 week long project that requires me to eat a flexitarian diet (semi-vegetarian). I'm actually really enjoying this and I'm trying all sorts of new recipes in the process. Here's one that I thought was so delicious I just have to share it! It is a recipe from The Vegetarian Times Complete Cookbook which I have tweaked just a little.

Winter Squash with Cranberries & Raisins

2 acorn squashes, halved and seeded
1/2 cup Craisins
1 small apple, chopped
1/4 cup raisins
Juice and grated zest of 1 orange
1 1/2 tablespoons honey
Pinch of salt

1. Preheat the over to 375F. Place the squash cut sides up in a lightly oiled baking dish, and set aside.
2. Combine the Craisins, apple, raisins, orange juice, zest, honey, and salt in a bowl, and mix to blend. Pile the mixture into the squash cavities, and cover.
3. Bake until the squash is tender, 30-60 minutes (I know this is a wide range, but the actual recipe said less than 1 hour, and ours took an hour!). Remove from the oven, transfer to a serving dish and serve warm. Serves 4 (that's half an acorn squash a piece, so maybe more than 4).

That looks sooo good! I'm definitely trying it! You got me hooked on hummus by the way:) Last summer was the first time I've had it, and now I'm addicted. Will you send me your recipe for it and the bread you had with it?

This sounds yummy! I'm totally going to try it. And do I hear you have a good hummus and bread recipe? ;) Because I love that stuff too, and would love good recipes if you want to keep sharing them! :)

Lila is 2!!

Where did the time go? My baby is two and not really a baby at all. We love her to pieces and can't imagine life without her. She continues to learn things quickly and is already starting to read. Just kidding!! Just wanted to see if you were reading my post. Lila loves to learn, but she's not a genius (sorry sweetie--your genes aren't that good!). Lately she's been learning the sounds the letters make (she learned the alphabet at 16 mos.) and by sight she recognizes the words "cat", "dog", "Mom", "Dad", and "Lila." She knows all the colors (although her colorblindness sometimes gets her mixed up on red and green...those darn genes again!), shapes, and numbers 1-15. She enjoys singing, playing the "I Spy" game, running, climbing, going to nursery on Sunday, bike rides, looking at books, and going to the library. Oh yeah, and did I mention that she likes chocolate just as much as I do?? Maybe I shouldn't ha...

The long version & his name

I started working on this post on Wednesday, but I've been sick with a cold and desperately trying to get rest, so here it is Friday and I'm finally finishing it up! Monday morning I woke up with a sore throat and a cough. I thought I had escaped getting sick like Darren and Lila, but I wasn't feeling great so I slept in until 9am. Me and Lila hung out at home resting all day Monday. I spent so much time on the couch in the living room that I started sketching and making decorating/rearranging plans for the living room. I pinned curtain and art ideas on Pinterest and started pricing out my plans. When a friend invited Lila over for a play date on Tuesday, I started making plans for hitting up the craft store and beginning my living room makeover the next day.
